All Meat Monday?

Every once in a while I like to be a good wife.  Do something that will earn me some points.  Maybe to cash in for a later date.  We eat a lot of vegetarian meals at our house.  Which makes sense for me since I am a vegetarian but Scott isn’t.  He is super supportive of me though.  Usually, if he is in the mood for something carnivorous he will make it himself.  I don’t generally like to cook meat anymore.  Mostly, this is because I like to/need to taste test as I cook and that is impossible to for me to do.
I decided last Sunday that I would make some pulled pork for Scott.  Apparently, I will do anything to use that slow cooker.  He wasn’t feeling that great in the morning so I thought it would be something nice to do.  Little did I realize he would get sicker as the day went on and not be able to be my taste tester at all.  Nor did I know that I would end up using the cats for this.  He not up to eating anything at all and I felt like I had made this awesome dish that somebody should get to taste.  So treat time it was for those lucky kitties.  Scott ended up being really sick and not eating it for a couple of days.  Once he finally was able to keep food down he gave it a try.  Two thumbs up.  Yay.
I thought I would take a break from the norm and post a meat recipe on what would normally be more like Meatless Monday.  So, All Meat Monday this week then?  Which is fine by me and probably a lot of you since I know most of you are actually meat eaters too.  So here’s my Whole 30 approved recipe for pulled pork in a slow cooker.
Slow Cooker Pulled Pork
Ingredients
 
large pork roast
1 large onion, sliced
4 minced garlic cloves
2 tsp cumin
2 tsp chilli powder
1/4 tsp of cayenne
2 tsp oregano
1/2 tsp cinnamon
1 tsp paprika
2 tsp of sea salt
1 tsp of pepper
juice of a lemon
juice of a lime
Directions
I mixed all the ingredients together.  Then used the mixture as a rub all over the roast.  Then I covered the bottom of the slow cooker with the slices of onion.  Placed the roast on top of the mixture.  I squeezed a little of the extra juices out of the lemon and lime around the bottom of the roast and added a dash of water to the bottom but hardly any.  I set my slow cooker to low for 8 hours.  I cooked on low for 7 hours.  Occasionally, I basted the roast with its own juices in the last couple hours.  Then I cut the rope off the roast and pulled it apart with a couple of forks.  It fell apart beautifully.  I let it cook for the last hour just simmering in all its glory.
Honestly, it smelled amazing! I was a little tempted which was odd for me.  Especially, since even as a meat eater I never like pork.
