All Meat Monday II : Homemade Hamburger Helper

Most of the recipes I post are vegetarian because I am a vegetarian. Duh Although Scott does eat a lot of vegetarian food, he is not a vegetarian. Sometimes I like to be nice and make him something a little more carnivorous. Also, I cook a lot for my meat eating nephews. I thought I would post one of those recipes today.

I am totally getting right into all things fall. Don’t get me wrong I love summer but fall has my heart. I think it has something to do with all the comfort things that fall allows me to enjoy. Scarves, sweaters not that I am into those yet still too hot here candles, lattes and of course comfort food fits in perfectly here.

I am really into whole foods and eating as processed free as I can. As a kid there isn’t much better than Hamburger Helper in the from of comfort food. Except maybe the king of comfort foods KD. I wanted to find a way to make it but without all the garbage ingredients that come with it. I found a recipe online that I thought I would try. You can find it here. I have played with it a bit and here’s what I came up with. 

Homemade Hamburger Helper

INGREDIENTS :

1 lb ground beef (veggie ground if it is for me)
2 cups of the noodle of your choice I usually use Scoobi Doo aka Cavatappi noodles because they are my favourite or extra broad egg noodles
1 tbsp of butter
1 tsp sea salt
1/4 tsp fresh ground black pepper
1/2 tsp sugar
1/2 an onion diced
1 tbsp fresh oregano, finely chopped
1 tbsp fresh parsley, finely chopped
3 cloves of garlic, minced
1 tsp paprika
1/2 tsp chilli or chipotle powder whatever I am in the mood for
1 squirt of Sriracha whatever that means to you
2 cups of milk for the boys use regular milk at home I use coconut
1 cup water
2 cups of cheese, grated I usually used cheddar or marble

DIRECTIONS :

Brown meat until almost done over medium heat and drain.

Add diced onion to meat and continue to cook until meat is done and onions are transparent.

Drain again if needed but I don’t usually have to. Depends on what type of ground beef you are using.

Add the rest of the ingredients in except the cheese and bring to a boil.

Once boiling turn down low and cover. Simmer for between 7-10 min depending on the type of noodles you are using.

Once the noodles are ready remove from heat and cheese. Let sit until sauce is the desired consistency if it isn’t already.

Devour. Serves 6. Supposedly.
