Meatless Monday : Vegetable Lentil Soup

I am trying to get into the fall mood around these parts as so many of you are. It is such a fabulous time of year. It is still pretty darn warm around here so that makes it a little more difficult. To help me get into the fall mood I went out yesterday and bought my weight in fall scented candles and some new decor. I wanted to get some stuff to make a new wreath but that didn’t happen. I will have to go out looking again this week.
I have also been into the comfort foods a bit too. I am on mission to make all things right now. I think some more banana bread is going to be coming up soon. I am going to have to tackle all the some pumpkin flavoured things ASAP. For today though, it will be Vegetable Lentil Soup. This soup is definitely a go-to favourite around these parts but it is especially good to enjoy in fall and winter, for obvious reasons.
Shall I share the recipe with you now. It also goes especially good with Nana’s buns just to let you know.

 

Chunky Vegetable Lentil Soup
Ingredients 
 
2 tbsp of olive/coconut oil
3 cloves of garlic, minced
1 med onion, diced
1/2 lb. of baby carrots, chopped
3 ribs of celery, chopped
1 cup of green lentils
1 can of black beans, drained
1 tsp cumin
1 tsp oregano
1/2 tsp of paprika 
black pepper (to taste)
your favourite hot sauce (I use Sriracha or Louisiana depending on if I am doing whole 30 or not)
chipotle pepper juice (to taste, I usually put about a tsp)
4 large tomatoes 
4 cups of vegetable broth or water
1 tsp of sea salt
Instructions
 
Grab your crock pot.  I always put the oil in first and sort cover the inside of the pot with it. 
 
Then I add the onions and garlic and then the rest of the ingredients.  Not sure if it makes a difference or if it is just left over from how I was used to cooking it on the stove. 
 
Then I mix it all together.  I know, shocking
.  
It gets cooked on low for 8 hrs and I like to stir it occasionally.
   
It actually cooks way faster on the stove and is ready in about an hour which seems like it would be easier but there are a lot more steps.  It is no secret that I am addicted to all things crock so I usually do it this way now.  I am not even sure it is logical but whoever said I was.
