Happy Monday! I don’t always say that on Mondays but when I do it is a long weekend. Today is Victoria Day here in Canada otherwise known as the May Long or May Long Weekend. It one of my favourite long weekends since it marks the beginning of summer.
Saturday we headed downtown to Main St for the market. Always a favourite, I don’t get to go as often as I like because I work most Saturdays in the summer. I love all the different things you can find there from trinkets and household stuff to fresh baked goods and homegrown veggies. All the food trucks a person could want to choose from. Oh and the wine. Always the wine. We found a new winery on the way out that apparently just opened up on the Naramata Bench, Mocojo. We sipped a few samples quickly, snatched up a bottle of Viognier and promised to stop by the winery soon. That is a promise we intend to keep.
After the market we headed back home to due some things around the house before going out to diner with my MIL and Scott’s brother since he is in town for the weekend. This included making some delicious wine slushies. Just wine and frozen peaches blended into perfection.
I had intended to lounge with that drink a little longer on the patio but unfortunately got chased in by allergies. So I decided to try out this cookie recipe I have been drooling over from Andrea of the amazing blog The Pineapple Cake. It is the most amazing recipe for Dark Chocolate Chunk and Sea Salt Cookies ever. The best part is it is mostly guilt free. I say that because the recipe is only for a batch of 8 cookies. I love the idea that I can quickly whip up a batch of these to satisfy my craving but then I am not stuck stuffing 5 dozen of them in my face as fast as I can.
I did double the recipe because I wanted to take some to my MIL later that day when we went to dinner. But I know this will be a go to for me as single batch just for us to curb any future cookie monster cravings.
On Sunday, I thought that there was only one way these delicious treats could get any better. Ice cream. Everything is better with ice cream. There is a little coffee in the cookie recipe swoon so I used Haagen Dazs Coffee ice cream. crazy caffeine addict party of one. I used a little life hack and sliced through the container to create the perfect size and shape ice cream filling. Super easy.
From the looks of this post, I spent most of my time this weekend hanging out in the sun, drinking or eating. If you add in a smidge of reading, some catching up on the DVR and one very stressful episode of Outlander you pretty much have it. I am kicking back and relaxing today maybe I will even fit in a BBQ or something crazy like that. In other words, it was an amazing long weekend and a perfect way to kick off the summer.
